Ingredients:
- 200 g red lentils (rinsed) provide a high-protein, high-fiber base.
- 400 ml vegetable broth for cooking the lentils, infusing them with extra flavor.
- 1 medium onion, finely chopped, and 2 cloves garlic, minced, add a savory depth.
- 1 medium carrot, grated, introduces a subtle sweetness and added nutrients.
- 100 g rolled oats and 50 g breadcrumbs ensure the loaf binds well and holds its shape.
- 2 tbsp tomato paste, 1 tsp smoked paprika, 1 tsp dried thyme, and 1/2 tsp ground cumin lend the dish its rich, smoky, and aromatic profile.
- Salt and black pepper are added to taste.
For the glaze:
