Start your day with a burst of flavour and nutrition by swapping your regular toast for a slice of Savory Red Lentil Loaf. This plant-based recipe combines hearty red lentils, vegetables and spices to create a delicious, protein-packed breakfast option that’s both satisfying and healthy.

Ingredients:

  • 200 g red lentils (rinsed) provide a high-protein, high-fiber base.
  • 400 ml vegetable broth for cooking the lentils, infusing them with extra flavor.
  • 1 medium onion, finely chopped, and 2 cloves garlic, minced, add a savory depth.
  • 1 medium carrot, grated, introduces a subtle sweetness and added nutrients.
  • 100 g rolled oats and 50 g breadcrumbs ensure the loaf binds well and holds its shape.
  • 2 tbsp tomato paste, 1 tsp smoked paprika, 1 tsp dried thyme, and 1/2 tsp ground cumin lend the dish its rich, smoky, and aromatic profile.
  • Salt and black pepper are added to taste.

For the glaze:

  • 3 tbsp ketchup, 1 tbsp maple syrup, and 1 tsp mustard combine to form a tangy, slightly sweet topping.

Preparation:
Cook the red lentils in vegetable broth until soft and water is absorbed. Combine with the other ingredients in a bowl and press into a loaf pan. Top with the glaze and bake for 35–40 minutes. Let it cool for 10 minutes before slicing.

At 230 calories per serving, this loaf makes a nutrient-dense, satisfying breakfast. Pair it with avocado, hummus, or fresh greens for added flavour and nutrition. Ideal for meal prep, this loaf is a versatile, delicious alternative to traditional morning toast.
