The festive season often leaves us with an abundance of food. Instead of letting leftover food go to waste, turn them into simple, flavourful dishes inspired by meals we share with our families.

1. Braai to stir-fry
Leftover braai meat? Slice it thinly and toss it into a quick stir-fry with bell peppers, onion and soy sauce. Serve with rice or noodles for a fresh take on this favourite.

2. Biryani bowls
Leftover rice and roast lamb or chicken can be reinvented into a flavourful biryani. Mix the rice with turmeric, cinnamon and cardamom. Add cooked meat and finish with a handful of raisins and fried onions.

3. Bread and butter pudding
Day-old rolls or bread can be transformed into a classic bread and butter pudding. Layer slices with butter, sprinkle raisins and pour over a mixture of eggs, milk and sugar. Bake until golden for a comforting dessert.

4. Vegetable fritters
Leftover chakalaka or roasted veggies make excellent fritters. Mix them with flour, egg and a pinch of spice, then fry until crispy. These are perfect as a light meal or snack.

5. Samp and bean croquettes
Turn leftover samp and beans into croquettes by mashing them together, shaping them into balls and frying until crisp. Serve with a dollop of tomato relish.

Repurposing leftovers saves money, reduces waste and adds variety to your meals. With these easy ideas, you can enjoy festive flavours for days, using what’s readily available in your fridge.
